- 1 box lemon cake mix
- 1 20 oz can crushed pineapple - UNDRAINED
- 1 cup coconut
- Combine in a large bowl
- Mix on medium
- Spoon into lined cupcake pan - about 2/3 full
- Bake according to directions
- Let cool
Pineapple Coconut Cream Cheese Icing
- 8oz cream cheese - softened
- 20 oz crushed pineapple - DRAINED
- 1 cup coconut
- 1/4 cup sugar
- Combine cream cheese, pineapple, coconut and sugar in medium bowl
- Spread on cooled cupcakes
- Refrigerate
These were simply AMAZING!!!!
