Garden Bacon Monkey Bread

Garden Bacon Monkey Bread

  • 4 cans biscuits - cut into 1/3
  • 1/4 cup melted butter
  • 1/4 cup real bacon pieces
  • 1 green pepper - diced
  • 1 red pepper - diced
  • 1 jalapeno
  • 1/2 red onion
  • mushrooms
  • 1/2 cup shredded cheddar cheese
    • Mix all ingredients thoroughly
    • Spray bunt pan
    • Bake 350 for 30 - 35 minutes (I baked mine longer because it almost filled the pan) and used a knife to check if done.
    • Flip onto plate - immediately after removing from oven
Everyone thought it looked like fruit cake - it was wonderful.  The original recipe called for 1/4 cup each of the following - real bacon pieces, green pepper and red pepper.  I added the jalapeno, onion and mushrooms, but you could add any vegetable you would like.

Pina Colada Cupcakes

Pina Colada Cupcakes
  • 1 box lemon cake mix
  • 1 20 oz can crushed pineapple - UNDRAINED
  • 1 cup coconut
    • Combine in a large bowl
    • Mix on medium
    • Spoon into lined cupcake pan - about 2/3 full
    • Bake according to directions
    • Let cool
Pineapple Coconut Cream Cheese Icing
  • 8oz cream cheese - softened
  • 20 oz crushed pineapple - DRAINED
  • 1 cup coconut
  • 1/4 cup sugar
    • Combine cream cheese, pineapple, coconut and sugar in medium bowl
    • Spread on cooled cupcakes
    • Refrigerate
These were simply AMAZING!!!!
